           EATING TOMATOES LOWERS CANCER
A UK research  has suggested  that eating tomatoes may lower the risk of prostate cancer.
 
This is according to a UK study which observed that men who consume more than 10 portions of tomatoes each week reduce their risk by about 20% .

Prostate cancer is the second most common cancer in men worldwide, with 35,000 new cases and around 10,000 deaths in the UK every year. 
 
Cancer experts recommend eating a balanced diet which is high in fruit and vegetables and low in red and processed meat, fat and salt.

KADUNA GOVERNMENT PARTNERS WITH BANK OF INDUSTRY TO BOOST ENTREPRENEURIAL DEVELOPMENT


The Kaduna State Government and the Bank of Industry have signed an agreement to raise N1billion Entrepreneurial Development Fund to boost the operation of small scale businesses in the state.

 
This is even as the development bank put the total loan portfolio to Small and Medium Enterprises in Kaduna state till date at N23.6billion. 

Based on the term of the agreement, the Kaduna State Government raised the sum of N500million, while BOI matched it up with another N500million, totaling N1bn.

The fund, which will be given out as soft loans, is aimed at empowering small businesses in the state to, among other things, enable them process the abundant agricultural products that abound in the state, thereby arresting  the colossal post-harvest losses occasioned by lack of crop preservation capacity.

PRESIDENT OF NIGERIA ORDERS CBN TO PUT FIFTY BILLION NAIRA ASIDE FOR AGRIC MECHANISATION FUND FOR FARMERS IN NIGERIA  

President Goodluck Jonathan has directed the Central Bank of Nigeria (CBN) to set aside N50 billion as agricultural mechanisation intervention fund for farmers in the country.
 
The president gave the directive on Tuesday in Abuja while inaugurating a 100,000 metric tons silo as well as an agricultural equipment hiring enterprise.

Jonathan, who was represented by Vice-President Namadi Sambo stated that expanding the country’s food storage capacity was necessary to reduce post-harvest losses.

He also said that agricultural mecahnisation would ensure commercial production of agric produce in the country. www.thisdaylive.com

                    Corn flour custard


Corn-Flour-Custard-powder-Homemade-Mango-Icecream 1 level cup of custard powder
1 cup cold of water or milk
Sugar to taste
852ml boiling water or milk
Method
• Add cold water or milk to the custard powder and blend to a smooth paste
• Pour really boiling water or milk on the paste stirring all the time as if you were making akamu or eko. It thickens on cooking and changes colour
Return to the saucepan and keep stirring until it boils up again
• Add sugar and more milk as desired
Note: Pouring custard takes about 1 cup custard powder to 852 ml of boiling water and coating custard 568 ml of boiling water to 1 cup of custard powder.

Esusu and Ofe Ugbogoro (Okra and pumpkin soup) (Recipe for 3 servings)


• 1 bunch pumpkin (ugbogoro)
• 3 cups okra (chopped)
• 2 cooking spoons palm oil
• 1 onion, sliced
• 3 tablespoons ground crayfish
• 4 fresh peppers (crushed)
• 4 pieces mangala fish
• 1 kilogramme assorted meat
• 1 stockfish
• Salt and seasoning to taste


Preparation
   Wash the pumpkin in salted water and shred, set aside and cook the meat, fish and stockfish with salt and seasoning to taste. When tender, add the palm oil, crayfish, and stir until the mixture is thoroughly mixed. Add the peppers and onions before adding the okra and the pumpkin leave. Stir and serve with cornmeal wrapped in leave. You know what I mean? Esusu, of course

            Fried plantain with eggs


Plantain and eggsRecipe for 6 servings
• 8 ripe plantains
• 2 cups of vegetable or groundnut oil
• 5 eggs (whisked or beaten)
• 6 large fresh tomatoes (diced or sliced)
• 3 fresh red pepper (diced or sliced)
• Salt and seasoning to taste
• 1 onion (sliced or diced)
Method
    In a large frying pan or deep fryer, heat the oil. Wash the plantain, peel and slice them diagonally lengthwise. The slices should be 1/2 inch thick. Season with salt. Place them in the hot oil and fry until golden brown on both sides. Remove from oil and drain. Set aside and prepare the egg sauce.
   For the egg sauce, fry the onion, tomatoes and peppers in hot oil for few minutes. Add the whisked or beaten eggs, salt and seasoning to taste. Allow to set, and then remove from heat and serve as a side dish with a hot sizzling plate of custard, well-set pap or alongside a cup of tea. This recipe can also be served as an appetizer or snack.

                            Potato beans porridge              

IT’S already a dampening season.  Potatoes combined with beans can make you a very delicious porridge meal, although most people are used to yam.

 
What? Potatoes combined with beans?  How on earth? Well, a trial would convince you. Either the Irish or sweet potato would do, but I suggest you use the sweet type. After all, large potatoes are now in season, special thanks to the rains!

  Potatoes are nature’s energy giver. They easily replace essential vitamins like vitamin A, B and C. Other minerals such as iron, calcium, potassium as well as value protein and carbohydrate can be found in potatoes.


They are also rich in starch and saccharin sugar (especially the sweet ones), a good combination with beans can be an enjoyable, full-blown balanced diet.
   
Recipe for 4 servings
4 cups of beans (brown or white)
6 large potatoes (sweet)
1 whole ice or smoked fish
3 cooking spoons of ground crayfish
4 fresh pepper (blended)
1 big onion (sliced)
2 cooking spoons of palm oil
 Salt and seasoning to taste
Method
Select and wash the beans, pour into a sizeable pot and boil until tender. Peel, and wash the potatoes and add to the tender beans cut, wash and add the fish to the pot. Add enough salt and seasoning to taste, including the onion.
 Allow to cook until the potatoes are almost tender and add the palm oil, pepper and crayfish. Do not stir, just cover, simmer and leave to cook until the potatoes are tender.
    Stir thoroughly; add any other ingredient you want. Please make sure you do not remove from heat until the oil is properly cooked and dissolves into the porridge. Serve as beans porridge on cold chilly day as either breakfast or lunch!
   This meal is also very ideal for any growing child; the sugar content in the potatoes will compel any child to eat to his or her fill. So walk into your kitchen and use those potatoes and beans for this sumptuous delicacy.

       Snail and green plantain pottage

• 12 small snails (dressed)
• 4 green unripe plantains (chopped)
• 1 teaspoon pepper
• ½ teaspoon potash
• 3 tablespoon palm oil


Method
CLEAN and wash the snails. Peel the plantain and cut each into pieces. Bring the plantain and snail to boil, adding a little water. Add the palm oil, salt, pepper, potash and seasoning to taste. When the plantain and snails are tender, remove the snails, separate the shell from the flesh and cut away any part you consider inedible. Return the edible portion to the pot and cook for another 5 minutes. Stir the plantain until it thickens. Serve hot like any other pottage.

EU compensates fruit and veg growers hit by Russian ban


The European Commission has announced emergency EU funding of 125m euros (£100m; $170m) for fruit and vegetable growers hit by Russia's ban on most imported Western food.

The funding is compensation for fresh produce which will not be sold. Instead it will be distributed free to schools, hospitals and other institutions.
 
Tomatoes, peppers, cucumbers, grapes and pears are included in the scheme.

Food prices are rising in parts of Russia and experts say the state embargo on imports of Western food appears to be making things worse.

EXPERTS LINK INSTANT NOODLES TO HEART DISEASES AND STROKE

 Experts have linked habitual eating  of instant noodles to challenges with the human metabolic process resulting in heart diseases and stroke in the long run.

 
Ordinarily, noodles, a staple food is seen as cheap, easy to prepare and best eaten by school children and workers who have little time to eat major foods.

Fox News says, a new research has found that the instant noodles commonly known as ramen may increase people’s risk of metabolic changes linked to heart disease and stroke.
 
In the study, according to Fox News, “women in South Korea who consumed more of the pre-cooked blocks of dried noodles were more likely to have metabolic syndrome regardless of what else they ate, or how much they exercised.”

EXERPT OF THE INTERVIEW:

   
"Divine Fish Farm began in 2008 when my mother received a loan of six hundred thousand naira (=N=600,000). She used the money to construct three fish ponds in a portion of our compound near Sango Ota, Ogun State.
We stocked two thousand pieces of catfish fingerlings in the ponds, fed them to table-size and sold them after six months to market women who come in groups to our house to buy fresh catfish wholesale. These market women retail the catfish in nearby markets.
The running cost of growing the first set of catfish was about three hundred thousand naira and we made sales of about four hundred thousand naira.
Today we can grow two thousand pieces of catfish with three hundred thousand naira and sell them for four hundred thousand naira after four months. What is more is that we can still do better with our current capacity.
We have made improvements since we began the business six years ago in 2008. For example, last year, 2013, we invested in a brick oven for processing our catfish.
Adding value to our catfish by processing them allows us get better returns. The main effect is that a catfish growth and sales cycle that used to take us six months now happens in four months.
Processing our catfish also means we can have customers far from our farm. For example we have a customer in a catering school in Surulere, Lagos. We also have a customer in the United States of America (USA) to whom we export processed catfish".

Divine Fish Farm as a Business
"The first thing anyone will ask you if you say you want to start your own catfish farm is if you have reliable source of water. (This of course assumes you already have the piece of land on which you want to construct or install your pond).
You will also need feed for your catfish, electricity to pump water, a little knowledge about how to grow the catfish, attention to the business, patience and keen interest to see you through each cycle of the business which begins  when you stock the catfish as fingerlings and ends after you sell them all four to six months later.
In the beginning we relied a lot on the experience of other catfish farmers in our locality around Sango Ota, Ogun State.
We went further by going on the Internet to research catfish farming. We got materials from a University in the Mississippi are of the USA which were very useful.
We learned from the materials that factors necessary for optimal catfish growth are quality of the fresh water, quality of the feed, feeding, and surface area of the fish pond in which the catfish grow.
We have also received business training along the way because at the end of the day the catfish farm is a business and it is important to make profit to pay the bills and contribute to putting bread on the table.
We have learned to balance the books, improve our marketing and broaden our customer base.
For me it has been a great practical business learning experience. A catfish farm business with an annual capacity of six thousand fish and one million three hundred thousand naira turnover is a micro business.

With my experience in the business it would not be too much trouble for me to scale up the business or even to venture into a new agro-based business".

Fresh catfish is a delicacy. It is widely enjoyed as catfish pepper soup in homes. Catfish pepper soup is popularly called ‘point and kill’ in bars and restaurants.
Fresh catfish is also great for cooking stews.
There is also processed catfish. The processing in our farm is a systematic smoking and drying of fresh catfish in brick ovens using firewood and charcoal.
The catfish that emerges at the end of the process is a tasty delight. It will transform your soups and stews. You can also use it to cook jollof rice and yam porridge.
Expectant mothers love pepper soup cooked with dried fish.
Some Nigerians even use the processed catfish to drink garri. Once I delivered processed catfish to a doctor at his clinic in Surulere and right in front of me he opened one pack and started chewing on a piece of fish. He so loved it that he finished one whole piece before I left his office.
Nutritional Benefits of Catfish
Catfish helps you meet your protein needs and boosts your intake of vitamins and healthy fats and fatty acids.
 Catfish is low in calories and fat.
Eating catfish is a tasty way to boost your intake of omega-3 and omega-6 fatty acids. Both of these nutrients play a part in heart and cognitive health. Consumption of these fatty acids is thought to be associated with reduction in blood pressure and reduced risk for certain cancers, inflammatory conditions such as rheumatoid arthritis, and even mental decline.

Catfish Farming as an Avenue for Self Employment
Former President Olusegun Obasanjo said that if you want to become a billionaire then you should go into farming. Obasanjo is a farmer so he should know.
Food will always sell, and in Nigeria with a population of one hundred and sixty million people, there is a large market for good food at the right price.
I encourage young Nigerians who have the interest and who have access to the factors of production needed to start a catfish farming business to try it.
Catfish farming is something you can do in your backyard if you live in a compound owned by your family.
If you have the opportunity and the will, go start something. When you succeed it will open other doors for you.
But then it does not have to be catfish farming. Nigeria is blessed with so much arable land in the rural areas and if you come from an area where farming is practiced extensively you can give it a try. It is a move that will require a lot of bravery but if you have completed higher education then you should be sufficiently educated to pull it off.
Agriculture has a long chain of production which includes planning, production (crop production, fruit production, and livestock production), harvesting, processing, marketing, distribution and sales. An enterprising young Nigerian should be able to find somewhere to plug his skills into.
You do not have to be engaged in the physical farming itself to be involved in the economy of agriculture in Nigeria.
Furthermore, agricultural methods in Nigeria’s rural areas are largely primitive and if you are equipped with some capital and the right education you can do wonders.

One thing I am sure about is that there is vast potential in agriculture and one piece of cheering news is that government at the state and national levels in Nigeria are allocating resources to implement agricultural reforms in Nigeria. One of their problems is that not enough young people are tapping into their programmes.
