Every day Nigerian Food!


Nigerian foods are diverse and exciting, they are so many, assorted and  very simple and easy to make. They are often natural foods, that are  rich in the necessary nutrients like protein, vitamins, fat and oil, dietary fibers, and many others.

Made in Nigeria foods can be low or high  in carbohydrates depending on the one you want eat, these include a wide range of highly nutritious and vitamin rich combination.

When people talk about foods eaten in Africa and Nigeria in particular, words like cassava, yams, plantain, palm oil, coconut and coconut oils, brown beans, and rice amongst others always ring a bell!

These include  tropical fruits like oranges, tangerines, walnuts, mangoes, paw-paw, African bread fruit,  banana, African bush mango, carrots, to name but a few.
Here are some non-exhaustive list of foods consumed by Nigerians daily and that have been considered healthy.

JOLLOF RICE

Jollof rice ingredient is always rice and “TPO” i.e. (tomato, pepper and onion) plus scotch bonnets. It’s customizable according to your preference! Make it hotter than the sun, or as mild as a Europeans palette (JK, but not really). Add mixed vegetables if you want (please don’t). Best enjoyed with piping hot dodo and a cold super drink.
This food is full of pure flavorful carbs and it definitely is a food most Nigerians eat more than once a week!

Much ado about butter!

 Butter is said to be back in a big way, and it is reportedly  costing Australians more at the checkout!
A national shortage of the popular spread has reportedly led to a price increase of more than 20 percent at the major supermarkets, with industry sources blaming a drop in overall milk production, increase in demand from China, and a change in consumer tastes.
It’s not just name-brands that are more expensive, home-brands are costing more too.
Reports say a 500-gram block of Coles butter which used to cost $3.60, has now risen 22 percent to $4.40.
Aldi and Woolworths have also upped the price of their butter, but the price-spike is hitting small businesses as well.

The best street food in New York is said to be  Nigerian Jollof rice!

If you think it is  pizza, the answer is    no  no   no!

This is according to The Vendy Awards – the annual street food competition which determines who is crowned best street food vendor in New York City.

Reports say  DF Nigerian won the competition. It is said to be the greatest food truck operating in the Big Apple.

Well, the beauty of the story is this – it was founded by Nigerian couple Godshelter and Bisola Oluwalogbon!

The truck which has  been going for two years  all started with Godshelter selling meals out of the back of his car outside the Nigerian embassy in the middle of Manhattan.

New York is a city that is known for  so many different ethnicities – but  it’s heart warming to see a Nigerian business winning the hearts of diners.

Deep frying and research!

Scientists have declared that fatty acids released into the air from cooking may contribute to the formation of clouds that cool the climate.

This is according to the BBC which noted that fatty acid molecules comprise about 10% of fine particulates over London, and such particles help seed clouds.

It noted that researchers dismiss the idea that cooking fats could be used as a geo-engineering tool to reduce warming and stressed that  the research is designed to help reduce uncertainties about the role of cooking fats on climate.

Researchers believe the fatty molecules arrange themselves into complex 3-D structures in atmospheric droplets.

These aerosols persist for longer than normal and can seed the formation of clouds which experts say can have a cooling effect on the climate.

The authors say the study will shed new light on the long term role of aerosols on temperatures.

Atmospheric aerosols are said to be one of the areas of climate science where there are considerable uncertainties.

Moderate drinking of coffee!

 Moderate coffee drinking is said to be safe, and three to four cups a day may have some health benefits,.

According to a large review of studies, in the BMJ, it found a lower risk of liver disease and some cancers in coffee drinkers, and a lower risk of dying from stroke – but researchers could not prove coffee was the cause.

The review however confirmed that too much coffee during pregnancy could be harmful,

Experts said people should not start drinking coffee for health reasons.
The BBC  noted that the University of Southampton researchers collected data on the impact of coffee on all aspects of the human body, taking into account more than 200 studies – most of which were observational.
Compared with non-coffee drinkers, those who drank about three cups of coffee a day appeared to reduce their risk of getting heart problems or dying from them and the strongest benefits of coffee consumption were seen in reduced risks of liver disease, including cancer.

Grilled cheese and Quebec!

 From grilled cheese to cocktails, drag queen and leggings, the French-language watchdog in the Canadian province of Quebec has relaxed its guidelines around some common “anglicisms”. 

This is according to BBC.COM
 It’s the Canadian province that made international headlines for “pastagate” – a fracas over the use of the word “pasta” on an Italian restaurant’s menu in Montreal.

So it comes as no surprise that new guidelines from Quebec’s French-language watchdog on some common, longstanding “anglicisms” has sparked debate.

The use of a handful of English words whose Francophone equivalents have never been adopted by Quebecers are now considered acceptable infringements on French in the province.

Grilled cheese is  said to be as OK as “sandwich au fromage fondant”, cocktail instead of “coquetel” gets a pass, baby-boom can be used instead of “bébé-boum” and softball is fine in place of “balle-molle”.

A handful of words from languages other than English – café latté, gelato, scampi – are also now considered permissible in French in Quebec.

The 51-year-old language watchdog agency – the Office Quebecois de la Langue Francaise, known as OQLF – quietly adopted the changes earlier this year.

Nigeria’s President commissions feed mill, breeding farm, and hatchery in Kaduna!


President Muhammadu Buhari  recently  commissioned a $150 million integrated feed mill, breeding farm, and hatchery in Kaduna State.
In a series of tweets by the Presidency, Buhari was joined by the Kaduna State governor, Nasir el- Rufai, Minister of Agric, Audu Ogbeh and other dignitaries.

Everyday Nigerian Food!

BEAN AND PLANTAIN POTTAGE

A pottage made of beans and plantains is loved and relished by Nigerians who love pottage a great deal! Eateries, Bukaterias, Cafeterias, Canteens  and restaurants can testify to this! Oh I almost forgot Nigerian mama-puts!

From North to South, East to West, Nigerians are great beans lovers.

Most times, beans are commonly cooked with yams (Nigerians top producing food crop in the world).

But owing to the fact that plantains are all over the country, mixing the pair together becomes a gourmet delight! You know what! This variation balances the nuttiness of brown beans with the natural sweetness of plantain and palm oil which adds a rich smoky taste to it becomes the melting point for the food.

BEAN AND PLANTAIN POTTAGE!


Recipe for 2 servings
2 cups beans [brown or white]
1 onion [sliced or diced]
1 cooking spoons palm oil
2 big plantains [ripened]
A pinch of potash [optional]
Seasoning and salt to taste
1 red peppers [crushed or blended]

Method

 Make sure the beans are stone – free, wash them and bring to boil for 10 minutes.

. Drain off the water, return to the pot and add fresh water that will cook the food.

A pinch of potash can be added to the boiling pot! Why? [it’s a general belief that potash helps to soften beans, although this is optional].

. One or two slices of onions is a very good and healthy idea! This is because the onions will add a special flavour to the cooking beans!

. While the beans are cooking, add the sliced or diced onions, once this is done, the aroma of the food will change immediately.

. Continue to cook until the beans are very tender.

. Once you know they are tender, add the salt and seasonings to taste including one or two cooking spoon of palm oil.

. Allow to simmer for six minutes before adding other ingredients.

. Cover and simmer until the beans are ready.

. Remove from heat and serve while you quickly fry the plantains.

. Set a frying pan on fire, wash and peel the plantains, cut into sizeable – chunks and fry with the remaining cooking oil.

. Make sure a pinch of salt is added [althogh it is optional].

. Fry until the plantains are golden brown.

. Remove from heat and serve with the delicious protein enriched beans.

Ofada ice with ofada stew.



10 fresh Tomatoes

5 Fresh atarodo peper

5 fresh tatashe pepper

2 large onions

Garlic and ginger to taste (optional)

5 Large pieces of cow skin (pumo) diced
   assorted meat and intestine (shaki, fuku, etc)

3 shawa smoked fish (optional)

2 wraps of locust beans (iru)
   method

  check the rice for stones, wash with hot water, parboil and cook until tender. make sure its not too soft, thus ensure the water you use in cooking the food id added little by little.

   while the rice for stones, wash, season, and cook the assorted meat until tender. wash the tomatoes, pepper, ginger, parlic, and one of thye onions. pour into a blender and blend slightly, make sure the puree is not smooth, just pour the tomato mixture into a bowl and set aside.

    wash and slice or dice the other onion, set a pot or saucepan on fire, pour in the palm oil, add the onion and the tomatos - pepper mixture, the seasoning to tastes and other ingredients, including beans, stir and allow cooking for 10minutes. check for taste and serve on the ofada rice. A cup of cold water not dissapointed
