ADALU EPO (BEANS AND CORN RELISH)


 
Ogun, Oyo and other Southwestern states are noted for menus that consist of palm oil and other fat enriched nutrients.
One of the meals the men derive pleasure from is the popular beans and corn mixture known as (Adalu epo).
 Prepared with either fresh or old corn, the meal is best enjoyed when the maize used is very tender, and there is enough palm oil and crayfish.
  Adalu as a meal can be eaten as breakfast or lunch, it can also be used to entertain a first time visitor. It may not be too ideal for dimmer because it takes time to digest. Enjoy this protein/starch enriched meal.

          Recipe for five servings;
4 cups of beans (red)
5 cups of fresh corn
4 large fresh peppers (sliced)
1 large onion (sliced)
3 cooking spoons palm oil
4 fresh tomatoes (grounded)
5 table spoons grounded crayfish
3 dry fish (shawa)

Method
   Wash and boil the maize until tender. Cook the beans until soft to add to maize. Add salt and cook both for 10 minutes until the meal is pulpy. Add oil, pepper, tomatoes, dry and cray fish. Stir thoroughly with a wooden stick or spoon and cook on a very low heat.
Add a little water if necessary and seasoning to taste. Remove from heat and serve. This meal is very good for a cold day just make it more spicy and serve hot
