Asaro elepo is a simple but common porridge recipe relished by the Yoruba in  most south western states in Nigeria .

Plenty of palm oil and seasonings are usually used for this food and after preparation, the yam is cooked in a way that it melts – that’s why its called porridge.

Lets go…

Recipe for 4 servings:

  • 1 tuber of yam
  • 1 cooking spoon palm oil
  • Salt and seasoning to taste
  • 1 onion [chopped]
  • 4 fresh peppers (ground)
  • 3 tablespoons dried crayfish (ground)
  • 1 small bunch of vegetables [shredded]

Method:

  • peel, wash and cut the yam into small chunks.
  • Cover with water, adding salt until well cooked.
  • Add the palm oil  and allow to boil.
  • Add other ingredients and stir with a wooden spoon so that more of the yam can disintegrate.
  • Add the shredded veggies and simmer for few minutes.
  • Cool partially before serving and stir to allow flavour mix properly.
  • You can also serve the food  with leafy green stew containing meat, fish or snails. This is however optional.

Food is ready!
